It was past bedtime when I started spreading the hummus over the still warm bread and laying the tender, warm breast over it. I made 6 sandwiches, enough to get us through Wednesday. After all the time and money I had invested they had to be the greatest sandies ever.
They were.
There was enough leftover chicken that it turned up in numerous soups, a pilaf, a casserole and a noodle dish. Thank you Hen Spirit for providing sustenance to me and my family.
